Cooking courses vary with each school, but generally include a trip to the market to pick out fresh herbs and ingredients, instructions on preparing the different dishes, cooking and then dining on the finished items. Founded in the early 1990s by master chef Sompon Nabnian, the Chiang Mai Thai Cookery School was the pioneer of the many cooking schools in the city. This establishment’s main office and school are both within easy range of Thapae Gate. Course lengths are between half a day and five days. There are different course options on which budding chefs are provided with expert tuition on how to create Thai specialities including phanaeng curry, chicken in pandan leaves and desserts of sticky rice and mango.

The farm course comes with a tour of the kitchen gardens and insights on how and when to picks herbs and vegetables. Occupying a location near Thapae Gate in the Old City, the Thai Orchid Cookery School is another convenient option for those staying in central Chiang Mai. This school runs half-day morning courses six days a week. People taking course here choose from a menu which features spring rolls, three different curries, stir-fry dishes and desserts including banana cake.

The highly acclaimed Thai Farm Cooking School provides one-day courses at its premises 20kms from Chiang Mai. Courses here are fully inclusive and free pick up at hotels in Chiang Mai, a guided tour of Ruamchok Fresh Market, an illustrated recipe booklet and individual cooking stations are part of the package. Students learn how to make six dishes from a set menu. Among these are nam prik curry pastes, curries, chicken with basil leaves and bananas in coconut milk.

The Siam Rice Thai Cookery School offers short half and full day taster courses. One of these is in the evenings and a useful option for those with limited time on their hands. Students here learn by doing and will go home with all the knowledge needed to reproduce delicious Thai soups, noodles, curries and desserts plus specials such as green mango salad, sweet and sour vegetables, and Northern Thai khao soy curry soup.
